Raw Vegan Sandwich Recipe

I’ve been to a raw vegan potluck recently that one of my friends organized. Each guest had to bring a dish. So I decided to create raw vegan sandwiches that are easy to grab and fun to eat. They were absolutely the hit of the party!

It is definitely something you can make for your family and friends whether you’re hosting a party, dinner or event at work.

Here is the recipe:

Ingredients:

For the bread:

  • 2 1/2 Ground flax seeds
  • 2 onions
  • 3 Tomatoes
  • 1/2 cup ground sunflower seeds
  • 1-2 tbsp Chia seeds
  • 1/2 tsp Cumin
  • 1/2 tsp Paprika
  • Black pepper
  • Himalayan salt

For the Tomato-Walnut spread:

  • 2-3 Tomatoes
  • Handful dried tomatoes
  • 2 cup Walnuts
  • Black pepper & Salt (Optional as your choice)

Fillings:

  • Lettuce
  • Tomato
  • Yellow bell pepper
  • Alfalfa sprouts
  • Second optional spread – Avocado

Instructions:

Preparation of the bread:
1. Mix all the ingredients of the bread together in a food processor.
2. Spread the mixture on the dehydrator’s trays into a large square.
3. Dehydrate the large squares for about 6 hours.
4. After 6 hours, when the “dough” is a bit solid, cut the large squares into small squares (or in the preferable size you’d like them to be).
5. Turn the small squares on the other side and put them back inside for another 6-7 hours.
6. Check to see if both sides are ready. If it’s not ready, you can leave it inside for another hour or so.
If they’re ready, take them out of the dehydrator and put them aside.

Preparation of the spread:

  1. Mix all the ingredients together in the food processor.
  2. Spread a small handful (1-2 cups) on each piece of bread.

Notes:

  • The spread is good for about 3 days in the fridge.
  • The bread will last 2-4 days outside. It’s recommended to not put it in the fridge so that it won’t lose the texture.
